Ajwain, ajowan or carom, Trachyspermumammi, is an annual herb in the family Apiaceae. It originated in the eastern Mediterranean, possibly Egypt, Iran, Afghanistan and spread up to India from the Near East. In India, the major Ajwain producing states are Rajasthan and Gujarat, where Rajasthan produces about 90% of India’s total production.
